Cream Cheese and Spinach in a yummy sauce with Chicken Thighs
This low carb, trim healthy mama s dinner, is so easy to make. I don’t like cooked spinach and this was amazing! There were no leftovers either. When my life gets busy, I don’t always get to the grocery store. This was one of those dinners where I pulled meat out of the freezer and saw what I had in the fridge to make a meal. The results were amazing!!

Life can often get so busy that the drive-thru or delivery can call our names. When that happens, we need some on plan, easy dinners. This is one of those recipes. AND it is cheap. Chicken thighs are cheap, especially if you find them on sale. One of my local grocery stores has meat on sale every week. I try to get there on Sunday and buy their buy one get one free sale. Not only am I able to stock my freezer, I am also saving money. Win win in my book.
The sauce in the dish is really delicious.
You will want to serve this sauce over something. If you are wanting to stay low carb or trim healthy mama s, mashed cauliflower will be the way to go. I served the sauce over a new way I have been making mashed potatoes. It is half cauliflower and half golden potatoes. My teens and hubby had no idea they were eating cauliflower or that it is actually low fat. It fits into the e fuel of the trim healthy mama eating plan (low fat but has carbs). I have made this 3 times and they never leave leftovers! Add this to your next menu, I think your family will love it as much as mine.
Low Carb, THM S, Cream Cheese and Spinach Chicken Thighs
Ingredients
- 2 Lb Boneless, Skinless Chicken Thighs
- 1 T Olive Oil or other fat
- 1 t Salt
- 1 t Smoked Paprika
- 1/2 t Black Pepper
- 1/2 t Garlic Powder
- 1 Sm-M Onion, diced
- 1 T Minced Garlic
- 4 oz Cream cheese, I used 1/3 less fat
- 1 plus C Unsweetened Almond Milk
- 3 C Fresh Spinach, torn and long stems removed
Instructions
- Mix the salt, paprika, garlic powder, and pepper together. Sprinkle on both sides of the chicken thighs.
- Heat a large skillet over medium heat. Add your fat and place thighs in skillet. Turn the chicken thighs every few minutes until they are cooked through.
- Remove from the skillet. Add the onion. After a few minutes, add the garlic. Stir and cook until onion is soft.
- Add the cream cheese. Whisk until melted.
- Add in your almond milk. Add in the amount for the sauce you want. Whisk until well combined.
- Add spinach.
- Cook until wilted.
- Return the thighs back to the skillet. Allow to the chicken to get hot and the sauce thickened up a little bit.
- Serve over desired base.
