Low Carb Melt in Your Mouth Chicken

Melt in your mouth chicken, your new favorite dinner recipe.

I have made this delicious dinner a few times and every time I have made it, there are no leftovers. My family absolutely loves it!! The chicken is tender, juicy, and flavorful. If you have picky eaters in your house, this recipe is the perfect dinner recipe for your house. My crack chicken is one of my hubby’s favorite recipes that make. This is right up there with that recipe. When these are on the menu, everyone in my house is happy.

One of goals with my blog is to help busy moms feed their families meals that everyone will love. I have a few recipes that are more time consuming, but most of them are easy and perfect for busy days. This recipe is so easy, it honestly comes together in less than 15 minutes. You can also prep this a day or two ahead. Keep it covered in in the fridge with plastic wrap. Take the dish out of the fridge while the oven heats up.

This recipe is really adaptable and you can use what you have in the kitchen.

I use mayonnaise and non-fat Greek yogurt. You can use sour cream if you prefer. Mix up those ingredients to equal a cup. I like the combination that I use here but those three are fairly interchangeable in a lot of recipes. If your family isn’t a fan of garlic powder, cut it in half or eliminate it. You can also add some cayenne if your family likes things spicy. I don’t think you will be disappointed with this recipe, put it on your menu this week.

Low Carb Melt in Your Mouth Chicken, MIYM

Servings 0

Ingredients

  • 2 lb Chicken Tenders, or breasts cut into strips
  • 1/2 C Parmesan Cheese
  • 3/4 C Mayonnaise
  • 1/4 C Non-fat Greek Yogurt
  • 1 t Worcestershire Sauce
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1/2 t Dried Parsley

Instructions

  • Place all of your ingredients, except chicken, into a small bowl.
  • Mix everything together.
  • Place chicken on a lined small baking sheet (1/4 sheet) or use a 9×13 pan. Evenly dollop the creamy mixture over the top of your chicken.
  • Carefully spread the mixture over the chicken pieces. Bake at 375 degrees for 25 minutes. Check for doneness. If the pieces aren't cooked through, check every 5 minutes. You don't want to overbake them.
  • If your pan has a lot of liquid, you can carefully pour it out and put back in the oven for a few minutes. Allow to cool for a few minutes and serve with your choice of sides.
