Crockpot Verde Chicken, a Trim Healthy Mama Fuel Pull recipe- one of the easiest recipes ever!

This recipe is such an easy recipe, it really shouldn’t be called a recipe. A few ingredients dumped in the crockpot create a delicious filling or topping for just about any Mexican dish desired. You can make tacos, enchiladas, quesadillas, tostadas, and more! Since this recipe is a trim healthy mama fuel pull, you can go any direction you want to go with it.

This recipe is very versatile, go whatever direction you want with it.

When I made the verde chicken, I made batch of my ranch style beans and mashed some for refried beans. I had a batch of my fuel pull nacho cheese sauce in the fridge, ready to go. Pictured above are tostadas. I air fried the 25 calorie corn tortillas, topped with the beans and the chicken. I spread on the cheese sauce and topped with diced tomatoes, onions, and cilantro. Easy and simple.

Since the recipe is versatile, you can please the whole family at the same time!

I let my guys decide how they wanted to eat the verde chicken. You can also add cream cheese to it. Make it into enchiladas and top with a verde sour cream sauce! You could even make it into soup. As written, there is no heat in the recipe. If you like things spicy, use spicy verde salsa and add some jalapenos. I would love to hear how you make this for you and your family.

Ingredients

  • 1.5-2 Lb Boneless Skinless Chicken Breasts
  • 1/2-3/4 17.6 oz Bottle Salsa Verde I used about 3/4 of the bottle the first time, but 1/2 would have been better. You can always add more, but you can't any out
  • 2 t Garlic Powder
  • 2 t Onion Powder
  • 1 t Ground Cumin
  • Salt and Pepper to taste

Instructions

  • Place the chicken breasts in the crockpot. Top with seasonings.
  • Top with Salsa Verde
  • Cook on low 4-6 hours or high 2-3.
  • Slice or shred chicken. I used my meat masher.
  • Serve as desired.
