Low Carb Cheesy Sausage, Broccoli and Cauliflower Casserole

This low carb, trim healthy mama s, cheesy sausage casserole is delicious. For the sausage, use any low carb kind you like. In this recipe, I used half of a package that I bought from Costco. My local Aldi and Walmart both have some good options. I honestly knew this was going to be really good, I just didn’t know this was going to be as delicious as it was. You could finish this on the stove-top, use a lid to heat it through all the way. You could pop it in the oven for about 10-15 minutes or even spray your crockpot with non-stick spray and cook on low for 2 hours. You could even make this as part of your meal prep. I had planned on having this on Monday when I was doing my meal prep on a Sunday, but it looked and smelled so good, we had it for Sunday dinner.

These pictures don’t do this dish justice. It is so good, even my cauliflower hating son at a huge serving!! You could use all broccoli or all cauliflower if you wanted. I actually searched for a mixed bag and my local Walmart was out, so I bought one bag of each. If you need a family pleasing, busy night dish, this will be a hit. Even though on trim healthy mama, I don’t really watch calories, I am trying to lighten some of my heavy s meals. I used reduced fat cream cheese, but you can use regular if you want, or if you follow a low carb or keto diet, fill fat will work great. You can also use non-fat Greek yogurt or even broth in place of the 3 tablespoons of heavy cream. If you try this, let me know if you liked it.
Low Carb Cheesy Broccoli and Cauliflower Sausage Casserole
Ingredients
- 1 Package of Low Carb Sausage, sliced
- 1 M Onion, diced
- 1 T Olive Oil
- 1 T Minced Garlic
- 24 oz Frozen Veggies, I used one 12 oz Broccoli and one 12 oz cauliflower
- 8 oz Reduced Fat Cream Cheese
- 1 1/2 C Shredded Cheese
- 1 t Salt
- 1/2 t Black Pepper
- 1 t Smoked Paprika
- 1/2 t Ground Mustard You can use about 2 tsp of regular mustard
- 3 T Heavy Cream To keep this lighter, you can use non-fat Greek yogurt or even broth
Instructions
- Saute your onion in the oil in a large skillet.
- Once softened, add the garlic and sausage. Add your seasonings. Brown the sausage lightly.
- Cook your veggies in the microwave until almost cooked. Add to the skillet with the sausage.
- Cook through for about 5-7 minutes. Put a lid on the skillet to help keep moisture and heat in. Add your cream cheese and stir. Keep lid on while it is melting. Stir often.
- Add cheese and heavy cream (or other liquid). Stir until melted. You can serve this immediately. Top with cheese and place in the oven for a few minutes. Whatever works for your family.
- Serve warm with a side.
