Low Carb Shepherd’s Pie

This is a delicious low carb shepherd’s pie!

I haven’t had a shepherd’s pie since starting trim healthy mama. I loved making this for my family as my kids were growing up. It was family favorite. I thought I would try and replicate what I used to make but make it fit into the trim healthy mama way of eating. This is a thm s recipe which fits into the low carb diet as well. This another one of those recipes that you make ahead during a meal prep session.

This recipe will fill the craving for a delicious and creamy, carb filled shepherd’s pie

You won’t miss the carbs in this thm s version. It is very flavorful and the perfect comfort food. Make this healthy version and no one will know that it is healthy. My teens ate this and liked it! This is such a simple recipe that it is sure to become a family favorite.

Low Carb Shepherd’s Pie

Ingredients

  • 2 Lb Hamburger Meat
  • 1 Lrg Onion, diced
  • 2 t Minced Garlic
  • 1 1/4 t Salt
  • 3/4 t Black Pepper
  • 1 t Dried Thyme
  • 1 t Worcestershire Sauce
  • 2 T Tomato Paste
  • 1 1/2 C Beef Broth
  • 3/4 C Diced Carrots
  • 3/4 C Diced Celery
  • 1/2 C Green Peas
  • 12 oz Bag of Frozen Riced Cauliflower
  • 3 oz Cream Cheese
  • 2 T Butter
  • 1/4 C Heavy Cream
  • 3/4 t Salt
  • 1/4 t Pepper
  • 1 C S Shredded Cheese
  • Dried Parsley to add to the top

Instructions

  • In a large skillet over medium heat, brown the hamburger meat with the onion.
  • Add the minced garlic and continue cooking.
  • Add seasonings, carrots and celery to the skillet. Cook until carrots and celery start to soften, about 10 minutes.
  • Add Worcestershire sauce, beef broth and tomato paste. Stir together.
  • Stir in the peas and place mixture in a 9×13 dish.
  • Cook the cauliflower rice in the microwave until soft.
  • Add the contents of the bag into a food processer. Add the cream cheese and butter until mixed.
  • Add the salt, pepper, and heavy cream and pulse until well combined. Spread on top of the hamburger mixture. Sprinkle the top with cheese and the dried parsley. Bake at 350 for 15-20 minutes, or until hot.
  • Remove from the oven and allow to cool for a few minutes.
  • Serve with a side if desired.
