Low Carb Crockpot Roast

I love roasts. They make me think of cozy Sunday afternoons. You know what I don’t like about roasts? Their usual high cost. One of our local grocery stores often has some kind of meat, buy one package, get one free. They are still a little high priced, but are definitely cheaper when bought this way. I can now buy 2 roasts a month. This isn’t the cheapest meal, but it makes the roast about $10 per meal. It ends up being much, much cheaper than take out and much healthier for you.

This recipe is so great on a day when you are going to be gone all day. I prepped this on a Sunday afternoon. It was put in the crockpot base Monday morning and it cooked all day. I used various low carb veggies in my dish. You can use potatoes for your family that isn’t following the trim healthy mama woe if you want. My family ate the radishes without complaint. I do have an instant pot pot roast recipe on here. That one is pretty amazing too. Here is a link to that recipe, in case you have an instant pot. You can also make that recipe in your crockpot if you want.

This is a trim healthy mama s recipe. I used radishes, mushrooms, carrots, celery, and onions for the veggies in this. If you are following this way of eating, limit your carrots. They are fine in an s meal, but you don’t want to eat too many, or you could end up in a crossover. If you want to thicken up the broth, remove as much of the veggies and the roast from the crockpot. Add 1-2 tsp of xanthan gum to the pot and whisk until thickened.

Low Carb Crockpot Pot Roast

Equipment

  • Crockpot

Ingredients

  • 3 Lb Beef Roast
  • 1 C Beef Broth
  • 1 C Trimmed and quartered Radishes
  • 1 C Sliced Mushrooms
  • 1 C Celery, destringed and cut into chunks
  • 1/2-1 C Carrots, I used baby carrots
  • 1 M-L Onion, cut into chunks
  • Any other veggies that you want to add

Seasonings: 1 t of garlic powder, onion powder, and salt. 1/2 t black pepper, dried parsley and oregano. 1/2 T of dried, minced onion. 1 T worcestershire sauce.

Instructions

  • Place your roast in your crockpot. Add you veggies.
  • Mix the broth and seasonings together.
  • Pour over the roast and veggies in your crockpot.
  • Cook on low for 8-10 hours, or high for 4-6 hours. If you are home, you can flip the roast over half way through. This will allow for a more even cooked and tender roast.
  • Slice and serve with veggies from the crockpot. Add as much or little of the liquid you want.
