April Trim Healthy Mama Dinner Menu

It’s time for a new trim healthy mama monthly menu, April is already around the corner!!

Us mom’s are busy! Trying to come up with a menu with seasonal recipes every month can get frustrating. I also know that not everyone has lots of ingredients, all the cookbooks, or time to spend hours in the kitchen. Every recipe I include has passed the hubby and teenager taste test.

My biggest tip to stay on plan is to do some sort of meal prep.

I love to pre-chop veggies, get mixes made up, pre-cook some meat, etc. If I can get some meal prep done on a day that isn’t full, it makes the rest of the week that much easier. If I don’t plan or prep, my week is a lot harder to stay on plan. I also like to make sure I have either a dessert made or some on plan desserts in the house. I no longer need a dessert all day long, but it is nice to have something when a craving hits.

The THM menu has s and e meals, every Tuesday is Mexican and some crockpot meals thrown in.

I try to make it easy to stay on plan with s and e meals. I also rotate fuels so you aren’t eating chicken breasts three days in a row. I hope this is helpful and at least gives you some inspiration.

  11. Low Carb Creamy Pork Chops with mashed cauliflower and a salad S

  15. Shepherd’s Pie with a salad S
  16. Cheesy Sausage, Broccoli, and Cauliflower Casserole with a salad S
  17. Hobo Packs Any fuel
  18. Greek Chicken and a salad S
  19. Sheet Pan Fajitas Any fuel
  20. IP Roast with Veggies (use a crockpot if you don’t have an instant pot) S
  21. Black Bean and Corn Burritos E
  22. Marinated Beef Kabobs with Grilled Veggies S
