Low Carb Creamy Ranch Pork Chops

This turned out even better than I thought it would. My family absolutely loved it!! The next time I make this I will increase the sauce and serve it over mashed cauliflower. It was a perfect busy night dinner. I used pork chops that I cut from a pork loin that I found on sale. Here is how I did that, how to cut up a pork loin to save money.

This is a trim healthy mama s meal (also fits in the low carb and keto way of eating). I lightened this up by using 1/3 less fat cream cheese. I also made a small amount of the sauce since I didn’t have anything to serve it over. This will be a regular dinner in our house. I used boneless pork chops that were about 3/4 an inch thick. If you use thinner pork chops, reduce your cooking time. If you use chops that have bones, you will likely need to cook longer. Check the internal temperature of your pork chops so you don’t end up with raw or chewy, overcooked meat. Put these on your menu, I think your family will love them as much as mine.

Creamy Low Carb Pork Chops

Ingredients

  • 5 Boneless Loin Pork Chops
  • 1 T Ranch Seasoning, DIY or Packaged
  • 1 T Butter
  • 1 oz 1/2 Less Fat Cream Cheese
  • 1 t Minced Garlic
  • 1 t Ranch Dressing
  • Salt and Pepper
  • 1/4-1/2 C Water, Broth, or Dry White Wine

Instructions

  • Season you pork chops with salt and pepper. Sprinkle the 1 tablespoon of the ranch seasoning over the pork chops.
  • In a skillet big enough to fit your pork chops, melt the butter over medium heat.
  • Add your pork chops to the skillet.
  • Cook for 4-6 minutes on both sides.
  • Check the internal temperature of the pork chops. You want them to be almost completely cooked through, but not all the way. Remove from the heat. Add the cream cheese and minced garlic.
  • Stir and allow to melt a little and then add your liquid of choice.
  • Whisk in the 1 teaspoon of ranch seasoning. Whisk until smooth.
  • When melted and smooth, add the pork chops back to the skillet. Allow to cook for a minute and flip them over.
  • Cook for another minute, or until done.
  • Serve with some of the sauce on top.
