Low Carb Brisket cooked in the Crockpot, amazing!

Being from Texas, I grew up eating brisket. My dad even has a big smoker in the backyard. When my step-mom would find briskets for a good price, they would buy at least one. I always loved having my dad’s smoked brisket. It is so good. I didn’t know that you could buy a trimmed brisket. Aldi had the one I bought for 50% off. I couldn’t pass that deal up. I hope I can find some more good deals on trimmed brisket. I don’t have smoker so I need the trimmed version.

I bought 1/4 of a cow from a friend and it came with a square brisket. I thought that since we got 1/4 that they came that way. Obviously I was wrong. If you find a good deal on these smaller briskets and don’t have a smoker, I have two versions for you. Here is the instant pot version if you would rather use that kitchen appliance. Both versions are delicious.

Low Carb Brisket Side Ideas

Pair this delicious low carb brisket with coleslaw, mashed cauliflower, salad, broccoli salad, and twice baked cauliflower, are all great ideas. My kids had mashed potatoes and peas with their brisket. They love both versions. You can eat it it with some sugar free bbq sauce on the side. I have made my own but Stubb’s bbq sauce is pretty good. You can find his sauces at most grocery stores. You can chop the leftover brisket, mix it with bbq sauce and serve it on low carb buns.
