Here is a THM menu for January
I make a menu and share with fellow thmers. I rotate proteins and s and e meals to make sure we aren’t stuck in a fuel rut. All of the recipes are special ingredient free and family friendly. They are pretty easy and quick to make as well. I know we are busy mommas and don’t want to spend all day in the kitchen.
I don’t have any meals listed for Saturday or Sunday.
My family either eats leftovers for Saturday dinner or they make their own. Sunday is normally a day where we eat out. If we don’t eat out, we usually have beans and rice. I am all about easy!!
I live in Texas and it is tradition to eat a cooked green vegetable and black eyed peas for New Year’s Day. If you eat them all at the same meal, that meal will be a crossover. If you want to start the year off without a xoer, you can either nix the black eyed peas or eat them separately with chicken breast or other low fat protein.

- Indian Spiced Chicken over brown rice E
- Crispy Chicken Thighs with Oven Roasted Veggie S
- Tostadas E
- Fast and Easy Beef Stir-fry S
- Parmesan Pork Chops with a salad and twice baked low carb cauliflower S
- Italian Chicken Sausage and Pasta with a salad E
- Mississippi Roast with mashed cauliflower and a salad S
- Mexican Chicken Soup S
- Baked chicken breasts with baked sweet potatoes and a salad E

I always look forward to your monthly menus. We have eaten several of your meals and they have always been a success. We really love your cheesy spagetti squash casserole. I even have a spagetti squash in my fridge waiting to be roasted. Keep if the good work
