Every month I try to put together a menu for the month. I try to include recipes that are really easy to make and special ingredient free. We are finally cold here, but it is Texas so we will most likely warm back up. This time of year seems to fly by so fast. It seems like we blink and the holidays are over.
I tried to find recipes for this trim healthy mama menu to be quick recipes or recipes that use the crockpot or instant pot.
You can do some prep work over the weekend to help make dinners easier. Here are some ideas for you: prep the pizza casserole- make the crust and then top the crust with the layers and store in the fridge. Heat up on the night you want to eat it. Precook hamburger meat, dump ingredients into baggies, like the papaya chicken. Chop veggies for your salads or other meals. If you look at the menu for the week ahead, see what you can prep ahead to your busy weeknights easier.
Tuesdays are all some sort of Mexican meal in honor of taco Tuesday.
Every Saturday is a crockpot recipe. I like to prep these meals on Wednesday or Thursday and actually store the meal in the crock, in the fridge. Saturday morning I will put it in the base and let it cook all day. A few of the meals are listed as any when I show what fuel it is. You can decide if you want to make it an s, e, or fp. Whatever you want to make it. Many are the Mexican meals. You can serve those with salsa, non-fat Greek yogurt, cilantro, green onions, light laughing cow cheese to keep it in the E or FP mode.
We eat out on Sunday’s for lunch. I am searching for really simple and cheap recipes to put in the crockpot on Sunday morning and have for dinner that night. The less work I have to do for Sunday, helps me free up my time to prep for the week. I hope this trim healthy mama menu for October at least gives you some ideas. I have 2 chili recipes, one is a bit more adventurous with some hidden veggies. You can choose whichever one sounds like your family will eat it. My family eats both of them.
